I don’t spend too much time on the computer anymore, so heres the recipe: Short & Sweet !
***You’ll need about 10-14 days to ferment your water kefir. Warmer temperatures are better. (65-80°)
WATER KEFIR ! (long ferment)
2-3 tbsp of Water Kefir Grains (at the very least), with starter liquid from previous batch.
2 quarts purified water
1/2 cup organic turbinado, brown or cane sugar
Fresh fruit of your choice: oranges, cherries, berries, anything very sweet
OR - Organic juice (orange juice or grape juice is lovely)
Boil 1 pint of purified water.
Remove from boil and add ½ cup of organic sugar (best quality you can get).
Stir to dissolve sugar.
While sugar water is dissolving/cooling: Add purified water to fill the 2 quart jar, Approximately 4 inches from the top.
Then add sugar water to the jar.
THEN ADD 2-3 TBSP WATER KEFIR GRAINS
Cover water/grains/sugar solution with a plastic ball jar lid and place in a dark, warm cupboard (near a heating vent works nicely) They like a 75º+ space to thrive.
Allow to sit for 7-10 days, liquid should have slight carbonation.
Strain water kefir grains with a fine mesh metal strainer
Set water kefir grains aside for a future batch with a small amount of the sugar water solution (½-1 cup is plenty)
Flavor your finished water kefir with juice or fresh fruit. I like to mash up the fresh fruit a bit to get all the juices out of the fruit, further flavoring the water. Fruit that lacks juice doesn’t work that well in my experience.
Allow to ferment for an additional 2-4 days.
Strain water kefir from whole fruit (if you used whole fruit)
Bottle fruit or fruit juice flavored water kefir in airtight containers
